Who doesn’t love sushi? Unfortunately it is often expensive for the amount of sushi you get. In addition, it is very nice to make it yourself. Moreover, you can choose exactly what you want in your sushi. In this blog you can read what you need to know as a novice sushi chef.
The sushi rice
Prepare well Sushi rice is step 1. This is also the most important step. If this doesn’t go well, unfortunately, the sushi has already failed. Therefore, make sure that the preparation of the rice goes well. If it doesn’t go well, you can try again.
You will need the following to make sushi rice:
-500 grams of sushi rice
-6 tablespoons rice vinegar
-4 teaspoons sugar
-2 teaspoons salt
You will also need the following materials.
-A clean tea towel
-A cooking pan with a lid
Choose a saucepan with a thick bottom. First wash the sushi rice well with colder water. The sushi rice is only thoroughly washed when there is no more cloudy water. When you’re done washing, let the rice drain for about 10 minutes.
Then let the rice cook with the 750 ml of water with the lid on the pan. After 2 minutes, lower the heat and let it cook for another 15 minutes. Then turn off the heat and let the rice stand for another 15 minutes. To prevent condensation, wrap the tea towel around the lid.
Then let the sushi rice cool to room temperature. By blowing with a newspaper you ensure that the rice cools evenly.
In the meantime you can make the vinegar. You do this by heating the rice vinegar, salt and sugar in a pan. Let this also cool to room temperature and then add it to the rice. Mix it well with the rice.
While the sushi rice is cooking you can prepare the ingredients. You can choose which filling you use, such as:
Tenderloin, (smoked) ham and (smoked) chicken.
Tuna, salmon, sea bass, crab, herring and shrimp.
Egg, tempeh, tofu, cucumber, avocado, cheese and pickled ginger.
Wasabi, sesame seeds, mayonnaise and soy sauce.
Making the sushi
You can make different kinds of sushi like Nigiri, Uramaki, Temaki and Maki.
Below you can read how to get the most famous species ‘lemur makes. You will need a bamboo mat for this.
Maki rolls officially only contain a filling. You will need half a sheet of nori for this. You can cut this sheet in half across the width.
Place the nori sheet with the ribbed side up on a bamboo mat. Seen from the bottom, fill 3/4th of the skin with sushi rice. Don’t make this too thick. Make a slit in the middle across the width. This is where you will put the filling. Don’t make this too thick, otherwise it won’t roll properly. You can also put a thin layer of wasabi in the slot first with a teaspoon.
When the filling is on the sheet, place your thumbs under the bamboo mat. Use your index fingers to hold the filling. Then you start rolling. Make sure you press the roll firmly so that you get a tight roll. In the beginning, this is not perfect, but practice makes perfect. Then press the roll one more time.
The maki roll should be cut into six pieces with a sharp knife. Making the knife a bit wet makes this easier. Do not apply too much pressure to prevent your sushi roll from changing shape.
